Sunlover Celebrates its Tropical Spirit with New On-Board Caterer

Sunlover Reef Cruises’ new on-board lunch menu is receiving rave reviews from passengers keen to satisfy their hunger with fresh, tropical flavours, seafood and hot dishes spanning all corners of the globe.

Group sales and marketing manager of Ocean Hotels and Tourism (the parent company of Sunlover Reef Cruises), Carol Fitzgerald is delighted with the response after out-sourcing their cruising menu to Tropic Spirit Catering in November last year.

Tropic Spirit Catering was launched last year by Cairns talented chef and businessman, Craig Squire (in partnership with ex Ochre head chef Nicole Tokoli), as a new division of his multi-award winning Ochre Restaurant and Catering.

Carol said the team at Ocean Hotels and Tourism approached Tropic Spirit Catering last year in a bid to raise the profile of Sunlover Reef Cruises and its lunch catering.

“We wanted to secure a quality caterer to service our clientele.

Craig is well known throughout our international markets as well as the Australian market and we believed he was a good fit for our guests.

“Craig was asked to provide a menu that would appeal to a multicultural mix of passengers from our key eastern and western markets.

The new menu was introduced in the middle of November and has received great feedback since,” she said.

Sunlover Reef Cruises’ daily lunch menu includes focaccia, cooked tiger prawns, selection of cold meats, salads and hot dishes comprising a golden beef curry, chicken and vegetable stir fry with black bean sauce and egg noodles, Mediterranean style vegetable and chick pea casserole and jasmine rice.

A seasonal fruit platter is also provided along with a wide selection of condiments.

Tropic Spirit Catering will also provide the food for Sunlover Reef Cruises’ new charter group market.

Craig is currently developing various upgraded menu options that will be presented to professional conference organisers and event planners.
